    Cobbled together from a couple of New York Times recipes, I created this Chicken Caesar Salad recipe. I will add photos next time I make it, and will turn it into a real recipe.  For now I just want to document it.  I use chicken tenders because the price per pound is cheaper than breast meat and tastes just as good, if not better!     Easy Turkey Meatloaf

    I got this recipe originally from a turkey meatloaf recipe on, but then modified it to my own. This is an update to my 2018 post, where I am now using the new WP Recipe Maker plugin. This dish is easy to make, and yummy to eat. It will probably feed 6 people, but I set it to 5 so that you would have ample portions. Easy low fat turkey meatloaf everyone will love

    Hoisin Chicken & Ramen Noodles for Lunch

    Writing this up quick so I don’t lose my simple recipe.  I will make it a real recipe later… This is lunch for one person, and it takes only 7 min to make! Get water boiling for the noodles while you chop up the other ingredients: Left over chicken cut into cubes.  About 4 oz (you can use any protein you wish) 2 cloves garlic minced 2-4 scallions cut up Ramen noodles (GF is you want) 1 tablespoon or more of Hoisi Sauce Lettuce chopped up cook garlic for 30 seconds then add scallions to it till done.  Mixt in Hoisin sauce and if it gets dry, add either water…

    Pat’s Scallops with Lime, Garlic, & Cilantro

    This is one of my favorite dishes my mom makes, and it’s super easy to make.  Serve over tiny Ukon gold potatoes, or rice. Prep all the ingredients before you start cooking the scallops, because this dish goes fast. This is from my mother Pat, who is the best cook I know! I don’t have a picture of the finished dish yet, when I do I’ll upload it here.

    I love Buddy V from Cake Boss, and when I found his video on youtube, he got me hooked on the idea.  The bummer is that his recipe on his YouTube channel is not correct, so I watched what he did and improvised a bit, but it’s mostly true to his video.  And no parsley!  I hate the hassle of buying parsley just for one meal, to just then get moldy in the fridge. I have made some adjustments to this recipe, so it’s not exactly his. I’m still writing up the recipe below   STILL UNDER CONSTRUCTION inspired by Buddy V's YouTube Video

    When I was a kid, my stepfather used to cook Chinese food all the time.  And one of my favorite recipe’s was one he called “Chicken with fish sauce”.  But I never liked the name, so I have renamed it and adapted it to be my own. This recipe was originally from the Craig Clairborne and Virginia Lee “The Chinese Cookbook”. I have modified it a lot and made more sauce.  This dish goes great over rice!     Chinese Chicken Thighs with Ginger Garlic Tomato Sauce

    This is the recipe for the dish my step father used to make from the Craig Clairborne Cookbook.  I have adapted it slightly.   I tried it in the slow cooker, but it’s really not as good.  Plus since it only cooks 30-35 min, the stove top is fine and makes cleaning up easier.     I loved Jello as a kid!  My mom use to make it for me in the 70’s all the time.  As an adult I still like Jello, but don’t want the added sugar.
