    Buddy’s Mushroom Risotto

    I love Buddy V from Cake Boss, and when I found his video on youtube, he got me hooked on the idea.  The bummer is that his recipe on his YouTube channel is not correct, so I watched what he did and improvised a bit, but it’s mostly true to his video.  And no parsley!  I hate the hassle of buying parsley just for one meal, to just then get moldy in the fridge. I have made some adjustments to this recipe, so it’s not exactly his. I’m still writing up the recipe below   STILL UNDER CONSTRUCTION inspired by Buddy V's YouTube Video

    Chinese Chicken with Carrots and Shiitake Mushrooms

    When I was a kid, my stepfather used to cook Chinese food all the time.  And one of my favorite recipe’s was one he called “Chicken with fish sauce”.  But I never liked the name, so I have renamed it and adapted it to be my own. This recipe was originally from the Craig Clairborne and Virginia Lee “The Chinese Cookbook”. I have modified it a lot and made more sauce.  This dish goes great over rice!     Chinese Chicken Thighs with Ginger Garlic Tomato Sauce

    This is the recipe for the dish my step father used to make from the Craig Clairborne Cookbook.  I have adapted it slightly.   I tried it in the slow cooker, but it’s really not as good.  Plus since it only cooks 30-35 min, the stove top is fine and makes cleaning up easier.     Lemonade Jello

    I loved Jello as a kid!  My mom use to make it for me in the 70’s all the time.  As an adult I still like Jello, but don’t want the added sugar. So here is my recipe for home made lemonade jello.  I like to use honey instead of sugar, but if you prefer sugar or any other sweetener use what you prefer.     Beef Stew with Guinness Beer

    This recipe is so easy!  it comes together fast, and the Guinness makes it hearty.  It originally came from an instagram post that my husband found, but then I modified it a lot. What I like about this recipe is that it’s fast and easy to make.  The key is to cook the onions and garlic first. But you do not need to bother cooking the potatoes first.  Using good quality ingredients will make this taste the best. I like Pomi tomoatoes and I tried for the first time frozen organic beef bone broth.  But really you can use any beef broth or chopped tomatoes.  This dish is less fatty…

    Pat’s Pasta with Scallops and Ham

    My mother invented this recipe, but then I modified it a bit.  I doubled the peas, ham, half & half, and garlic.  It’s also a generous portion for 3 people, so you could make this same dish for 4 people if you have salad to go with it. It’s super easy to make and yummy! You want the ham chopped thick so that you can bite into it.  What makes this recipe good is that you can bite into each chunk and get the flavor of it 🙂 As you can see in my picture, I cut up the ham too tiny and it was not as good.     Dairy Free Scalloped Potatoes

    I made this during my summer trip to Maine with David Hall’s wife Hannah in her great kitchen. Because I was not at home, I didn’t have my recipe on hand, so I worked from memory and improvised a bit.  I like the changes I make, one was adding garlic to the recipe, and cutting the potatoes thicker.  What makes this recipe really good is to use homemade chicken stock. You could also use beef broth if you prefer, but I always have a bunch of frozen cubes of chicken stock around.  See my recipe here for Chicken stock.
